Partial taxonomy I’m considering for iwlessons.com

This is a website I’m starting where I want to share 2 main things: ideas for writing prompts (for student bloggers) and short "mini-lessons" which teachers can use when they teach their students blogging.
What I’m not sure about is whether or not I want to use "custom post types." I haven’t used these before but I learned a little about them a few weeks ago and a WordPress users’ group meeting:
www.speedofcreativity.org/2012/10/29/custom-content-types…
I’ve started the site with custom post types, which I created using the free WP Plugin "Custom Post Type UI"
webdevstudios.com/plugin/custom-post-type-ui/
I don’t know (yet) how to tweak my WP code to display those custom post types, and I’m wondering if I should just stick with nested categories instead.
If anyone has advice about when it’s appropriate to use custom post types, and in my specific case/context if it’s a good idea or not, I’d love to hear ideas/recommendations.
